    Greek Potatoes

    A staple in most Greek households, these roasted potatoes elevate the basic potato to a whole new level.  Baked with lemon juice, garlic, and oregano (all ingredients essential in Greek cooking), These potatoes will rank in the best you have ever had.

     

     

     

    Combine all ingredients in a gallon size”zipper” bag, and shake to combine.

     

    Let everything marinate for 2 hours.

     

    Roast for an 1 hour and 10 minutes turning occasionally.  Serve immediately.

    Ingredients

    • 3 lb Yukon gold potatoes peeled
    • 0.5 cup fresh lemon juice
    • ⅓ cup olive oil
    • 2 clove garlic minced
    • 1 teaspoon dried oregano
    • ½ teaspoon salt or more for taste
    • ¼ teaspoon black pepper
    • 14 oz chicken broth

    Instructions

    • Parent Task: Peel potatoes and cut them in half (from medium size potatoes, quarter if large).
    • Kidtastic! Combine all other ingredients in a gallon size"zipper" bag, and shake to combine.
    • Kidtastic! Put potatoes in the bag and let marinate for 2 hours.
    • Parent Task: Preheat oven to 400 degrees.
    • Kidtastic!: Put the potatoes and marinade in a large casserole dish
    • Parent Task: Roast for 1hr turning occasionally.
    • Serve immediately
