    Egg Drop Soup

    This Chinese soup is one of the easiest, kid friendly recipes out there.  It’s a great place to start learning Chinese cuisine.  The ingredients are few, it takes maybe 15 minutes to make, and kids have fun watching the scrambled egg turn from yellow to white.

    Egg Drop Soup

    Ingredients

    • 4 cup chicken broth
    • 1 tablespoon soy sauce
    • ½ teaspoon sesame oil
    • 2 tablespoon corn starch (for thicker soups)
    • 2 tablespoon warm water to mix with corn starch (if using)
    • 4 eggs, beaten
    • ½ cup chopped frozen peas and carrots
    • 1 tablespoon chopped chives or scallions (optional)
    • salt and white pepper to taste

    Instructions

    • Team effort: In medium pot, combine the chicken broth, soy sauce and sesame oil. Bring to a boil.
    • Kidtastic! Stir together the cornstarch and water to dissolve cornstarch; pour into the boiling broth.
    • Kidtastic!: Add peas and carrots.
    • Team Effort: Stir gently while you pour in the egg Season with chives, salt and pepper before serving.
