A savory dish made with egg, milk or cream, and pastry crust, quiche is a staple in French cuisine.  So it comes as a surprise to many when the origins of the dish are actually traced back to Germany, to the medieval kingdom of Lothringen, which the French later renamed Lorraine. The word ‘quiche’ is from the German word ‘kuchen’, meaning cake.
Today, quiche are popular all over the world and can have any kinds of meats, cheeses, vegetables, herbs, and spices.  However, the Quiche Lorraine is and will always remain the original French Classic.
